Ingredients:
2, 5-ounce pieces of Atlantic Salmon, skin-on, scales removed
1/2 red onion, coarsely chopped
1/2 cup Balsamic vineger
Olive Oil Cooking Spray
Seasoning Blend:
1/2 tsp salt
1/2 tsp red pepper flakes
1/2 tsp rosemary
1/2 tsp thyme
1/2 tsp oregano
1/2 tsp parsley
Directions:
Preheat oven's broiler and set the oven rack about 6 inches from the heat source. Rinse salmon with cold water and place on a plate skin side down. Pat dry. Sprinkle seasoning blend on salmon, coating liberally. Spray seasoned salmon with cooking spray. Tip: spraying the salmon with cooking spray after it has been seasoned will seal the seasoning blend ensuring that it remains on the salmon during cooking. Place onion and Balsamic vinegar in a baking dish. Place salmon in the baking dish skin side up. Place the baking dish on the oven rack about 6 inches from the heat source. Broil for 10-12 minutes for medium temperature. Broil for an additional 2-3 minutes for well-done. Remove from the oven and let stand for 1-2 minutes. Serve and enjoy :D
